Vegan Bechamel Sauce

This is a recipe that I originally sourced and have adapted slightly from, of all places, the Tesco’s Supermarket  website. Not exactly known for vegan cooking, I am grateful to them anyway as this is amazing.

You can use this in lasagnes, cauliflower cheeses, pies, mornay sauce, macaroni cheeses, vegetable or pasta bakes, you can make a type of moussaka etc.

You don’t need real milk to make a great béchamel sauce…..


  • 1 onion, sliced
  • 400ml soy milk
  • 100ml water
  • 1-2 vegetable stock cubes
  • 2 bay leaves
  • Dash ground nutmeg
  • 3 tablespoons cornflour
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste

Cook it:

  1. Put the sliced onions in a pan with the soy milk and water
  2. Add the stock cubes, bay leaves and nutmeg
  3. Bring the liquid to boil and as soon as it does, take it off the heat and let it sit for 20 minutes for the flavours to really combine
  4. Remove the onion and bay leaves and discard
  5. Mix together in a separate saucepan the cornflour and oil until you have a liquidy paste
  6. Pour in the milky liquid into the cornflour paste and using a whisk, if you have one, continually whisk as you pour. Whisk and pour, whisk and pour….
  7. Put the heat back on a high heat, don’t stop whisking/stirring and the mixture will thicken up before your eyes. In no time, you will have a perfect consistency.
  8. Season with salt and pepper.
  9. Taste it and be amazed.

The only reason I have chosen this album, apart from loving it, is because I know that this recipe from start to finish, takes 30 minutes. This album lasts just over 30 minutes.

There is also a large part of this recipe where you are doing nothing and just waiting for the sauce to mingle. During that, go mental around your kitchen –  dancing, head-banging and most importantly, playing air guitar to ‘Treats’.

A metal, punk, bubble gum pop, indie album from Brooklyn. How’s that ever gonna be bad????
