Pad Thai Style Raw Zucchini Noodles

First up, let me get this out the way… I too hate it when vegans take a dish and completely change it to where it is unrecognisable and give it the same name. This is NOT pad thai and I can understand why it would annoy people, just like sticking a carrot in some bread is not a hot dog, hence why I am calling this pad thai style. No disrespect here, move along now…..

I have a strange relationship with raw food. I have tried eating a raw only diet and felt amazing initially, but then after a few days, cooked food was ALL I could think about.Yes, food should be about offering energy and nutrition, but it is also 1 of my 4 passions (with football, MMA and of course, music) and life is too short to not enjoy your passions. If you can handle it, go for it, you DO feel amazing, but I couldn’t.

I try and fit in few good raw meals every week though and this is a favourite of mine. My amazing girlfriend got me a spiralizer for Christmas and I have been spiralizing anything I can  since. If you don’t have one, I HIGHLY recommend getting one, they are a great way of fitting in more veg and it is extremely satisfying to spiralize a carrot!

I like to use zucchini (courgette) as a base to replace the ride noodles. I flip the blade halfway and use 50% spirals and 50% ribbons. It gives a much needed texture boost to an otherwise, 100% spiralized meal.


Serves 2


  •  1 large zucchini (courgette), half spiralized and half ribboned. Or 100% spiralized, if you prefer
  • 2 carrots, spiralized
  • 1 red pepper, julienned (chopped into thin slices)
  • 1/4 red cabbage, chopped into thin slices
  • 1/2 red onion, chopped into thin slices
  • 1 red chilli, chopped into thin slices at an angle
  • small bunch parsley, chopped
  • 1/4 cup good quality peanut butter
  • 2 tablespoons tamari or soy sauce
  • 1 lime, juiced
  • 1 tablespoon agave
  • 1 small thumb sized piece of ginger, chopped
  • a clove garlic, minced
  • handful of bean sprouts, to serve
  • handful of peanuts, chopped, to serve

Cook Prepare it:

  1. Add the minced garlic and chopped ginger to a bowl along with the peanut butter, lime juice, soy sauce/tamari and agave. Give it a good stir to loosen the peanut butter (I always use crunchy). Add a tablespoon or two of water to loosen and keep stirring
  2. Add all the remaining ingredients to a large bowl. You may want to cut the noodles and carrot in half or quarters to save a ‘Lady and the Tramp’ thing happening. Unless you want that to happen.
  3. Mix in the sauce and serve with chopped peanuts, bean sprouts and some chopped parsley
  4. Get it into ya!

This is definitely one for the diehards. Don’t listen to this and expect a ‘Changing Man’ or a ‘Wild Wood’. The Ballad of Jimmy McCabe is a soundtrack and expect that when listening. Soundtracks are written exclusively for the movie they are tracking and so atmosphere takes place over melody. It will sound excellent when you have the visual side to go with it, but without it you are left with atmospheric music only. I personally love it and have been waiting for this movie for a long time. I mean come on… East End, boxing, Ray Winstone, Lovejoy, Paul Weller, London. Oh yes!

Listen – but do yourself a favour and buy it on vinyl!!
